I thought there wasn't a proper pizzeria in Yamaguchi City, but there was one.The wood-fired oven is made by Stefano, a wood-fired oven manufacturer in Naples, Italy, and the chimney is Mr. Miyamura, a Japanese sheet metal champion who designs chimneys for pizzerias all over the country. The owner, Pizza Yolo, has a background in baking, and although he didn't have a proper master, he has solid baking skills. The fabric has a strong feel. The flour used is from Caputo, a Naples-based company, and the cheese is made in Italy, which gave me a sense of their seriousness.
