山梨と言えば桃！ぶどう！であるが、忘れてならないのがほうとうだ。武田信玄の戦国時代に保存食だったようだが、日常の主食として食べたいほどおいしい。
鍋の中でグツグツと味噌で煮込まれたカボチャもニンジンも甘くておいしい。そんなだし汁の中の平たい麺がモチモチとプレーンな味わいで調和している。
これほどおいしく且つヘルシーなほうとう。その専門店がどうして都内にないのだろう！？山梨県が禁じているのかな？
いや、こうして山梨へ足を運び、山梨の空気を吸いながら食べるからおいしく、そして意義あるのだろう。
