７月の週末、甲州ドライブに出かけた。当地の名物と言えば、郷土料理“ほうとう”である。Lunchに勝沼の“ほうとう専門店”を訪れた。車の往来が多い“勝沼バイパス”のすぐ脇とは思えないほど静かな古民家は、趣きのある佇まいである。
まだ昼前であったが、ゆったり広々とした店内はほぼ満席である。美しい庭園を望む座敷席に通され、「手打ちほうとう」1,300円をオーダーする。５分少々で、ぐつぐつと煮えたぎった鉄鍋が運ばれてきた。まず熱々の汁をいただくと、コクのある味噌仕立てである。まさに五臓六腑にしみわたる奥深い味わいである。トッピングの葱や油揚げは汁をよく吸って、旨みを一層楽しめる。
極太の麺は、不揃いな“手打ち感”がたまらない。もちもちの歯応えとすこぶる滑らかな舌触りで、極上の汁との相性も抜群である。ごろごろ入った根菜類もよく煮込まれ、それぞれが素材の美味さを競い合っている。とりわけ“ほうとう”に欠かせない南瓜は、ほくほくとした格別の味わいである。
古くから当地に伝わる郷土料理は、現代もなお人々の心をつかんで放さない。
