◆Outstanding dish: Yamanashi game pate en croute The buffalo with sakura shrimp and charred new onions, and the roast duck breast with a wonderful harmony of natural honey, semi-dried grapes, and red wine sauce were all main dishes that were sure to impress, but the appetizer pate en croute was outstanding. The Yamanashi game pate en croute had a nice floury aroma from the firm, chewy pastry, and the pate had a mosaic-like delight of venison, green-necked duck, and chicken liver in harmony, giving it a beautiful taste but also a powerful flavor. The garnishes and seasonings, such as the spring-like charm of spring orchids and kogoi, the refreshing sweetness of golden citrus, and the sourness of grain mustard, were all on point and precise. The chef is Yamada Shinji, who trained in France and honed his skills at Restaurants in Tokyo before opening a restaurant in his hometown of Yamanashi. This Restaurants is a "Gault & Millau 2024" two-toque restaurant. <Order> This time, we ordered the 8-item Coquelicot course for 10,000 yen + glass pairing for 7,200 yen.
