富士吉田市が誇る郷土料理の「吉田うどん」は、歯応えとコシが強い麺。噛めば噛むほどうどんの味を楽しめるとあって、長年好まれている。
かけうどんやつけうどんにして食べるのが一般的で、キャベツや馬肉などを入れるのも特徴。麺に合わせて作る出汁は、醤油と味噌をブレンドしたものが一般的で味わい深い。調味料には「すりだね」というゴマ、山椒、唐辛子などを混ぜ、油で炒めたものを使用し、これをアクセントにしながら食べるのが「吉田うどん」の特徴です。
そんな「吉田うどん」の中でも人気を誇るお店「白須うどん」では、店内に入ると目の前でうどんを作る工程を見ながら、注文を先にするスタイル。大きく分けると、かけうどんとつけうどんがあり、馬肉をトッピングするかどうかというのが違いになっている。
1杯500円から食べられるのも魅力的。全体的にバランスがよく、食べやすい。出汁はやや塩辛いため、全てを飲み干すことはなかったが、風味豊かで美味しかったです。
