８月の週末、甲州をドライブした。この日はLunchに、都留市の“手打うどん店”を訪ねた。既に開店前から待ち客があり、暖簾が掛かるとテーブル７卓の座敷はすぐに満席となった。
「肉うどん」600円と「かき揚げ」100円をオーダーすると、５分少々で着丼した。揚げたての「かき揚げ」はさくさくの食感で、小エビの風味が香ばしい。「肉うどん」はまさに“吉田のうどん”のお手本のようなできばえで、茹でキャベツ・馬肉・刻み葱がトッピングされている。
澄んだ汁をすすると、ダシの風味がよく香る。キャベツは僅かにシャキシャキ感が残る絶妙な茹で加減で、ほんのり甘みが感じられる。一方の馬肉は甘辛く煮込まれ、やわらかいが噛み応えがある。そして何と言っても、太いうどんの歯応えには驚かされる。噛むほどに、小麦の香りを心地よく感じる。中盤から卓上に用意された“天かす”、さらに自家製“すりだね”を加え味の変化を楽しんだ。
伝統に育まれた“吉田のうどん”、“ほうとう”とともに是非いただきたい甲州の逸麺である。
