Food You can enjoy both "Nagoya Hitsumabushi" and "Edomae Hitsumabushi"
We offer Nagoya Hitsumabushi and Edomae Hitsumabushi. There are differences in the way the eel is grilled and the sauce used. Nagoya Hitsumabushi is grilled raw to give it a fragrant flavor without being steamed, and the sauce is rich and sweet using tamari soy sauce and rock sugar. Edomae hitsumabushi is steamed and then grilled, resulting in a soft dish, and the sauce has a light flavor made from just soy sauce and mirin.

Our credo is to always seek the trends of the new era and create dishes that satisfy the hearts of as many people as possible.
