I went to Yanagibashi Kakujyu, a long-established Izakaya (Japanese-style bar) in Yanagibashi Market, Nagoya. It has been in business for 80 years, and is known for its Chanko nabe and fresh fish. It is about a 10-minute walk from Kintetsu Nagoya Station. In front of the restaurant, a red lantern with "Kakujyu" written on it is the landmark. When you enter the restaurant, you will find a spacious space with counter and table seats. The walls are decorated with photos and colored paper of sumo wrestling. The owner says that his hobby is weight training, and his physique is just like that of a sumo wrestler. He greets you with a smile. Looking at the menu, Chanko nabe starts at 2,000 yen per portion. Kakujyu's secret soup is a blend of bonito stock, soy sauce, koji miso, mirin, etc. The ingredients are generously filled with pork, chicken, seafood, vegetables, etc. When you take a sip, the soup is rich yet light. The umami of the ingredients is infused into it. You can't stop eating it. The black pepper gives it a spicy kick. It went perfectly with rice. I think Yanagibashi Kakujyu is a hidden gem of Nagoya cuisine.
