店主のこだわり、個性の強さに圧倒され、はじめは半信半疑な感情からスタートする。
ワイングラスだったり醤油皿の均衡の取れた形は食材の味を硬く尖ったものにするという言葉に、本当かなぁなんて気持ちのまま言われるがまま、楕円とも言えない不躾な形のワイングラスや醤油皿と均衡の取れたそれに入れた食材の味を比べると歴然の差。マジックのような驚きに、店主の世界観にスッと引き込まれてしまった。
すっぽんのレバーやら脂、串は甜菜糖と醤油の優しい味わいが初めての体験。シャキシャキの食感の鰤は下町江戸前鮨の酢と塩味の塩梅ながら、粒の立ったシャリと一緒に頬張ると、不思議なくらい双方の個性がうまく混じり合う。
ここの料理ってほんと不思議な発見が多い。
この日は他にすっぽん雑炊(おかわり可能)、すっぽんの酢豚(そもそも豚でない)。あとは前回同様の処女の銀杏餅、銀杏を炒ったもの。牛肉の里芋煮のようなもの。レアなカラスミなどなど。
なにより、グラスで飲めるレベルではないワインが好きにバイザグラスでいただける。
前回12000円のペアリングにしたところ前半に日本酒がダーっときて酔いが回ったところに美味しいワイン(ボトル市価5.6万円クラス)が来たのだけど味わうには時すでに遅し。というわけで、今回は5500円ペアリングを日本酒なしで(とはいえ最初に来た新政だけいただく)、ほかアラカルトでグラスを。そこでわかったのが、ポイヤックのラトゥールが5500円コースに入っている?!私はグラスで頼んだけれどそれでも1400円と?!カロンセギュールもグラスで1600円??昨今のワイン高騰を尻目に、納入した時点の価格のほぼ原価と思われる価格で出していただける心意気に脱帽。
価格の話、数字の話ばかりで恐縮なのだけど仕事がら数字をすぐ出してしまうのはご放念を。
