Hakata Kawaya's special manufacturing method is characterized by the fact that it takes six days to bake. First, the skin is carefully wrapped around a skewer and marinated in a secret sauce. Bake it, remove the oil, let it rest for a day, then bake it again, remove the oil, let it rest, and repeat for 6 days. This results in a crispy texture on the outside and chewy texture on the inside!
