Food ``Miso stewed udon'' made with love using traditional techniques
Miso Nikomi Udon used to be a home-cooked dish unique to this region, made by boiling dumplings and other ingredients in sumashi soup. When they added a special red miso to the soup and turned the dango into udon noodles, they were well received and have now become Local Cuisine loved by the locals. Inheriting traditional cooking methods, our restaurant offers ``nikomi udon'' in which raw noodles are simmered directly in an earthenware pot, rather than ``nabeyaki udon'' in which the noodles are par-boiled. Enjoy the chewy noodles that go well with the soup to your heart's content!

In addition to the miso-stewed udon noodles, we also offer a la carte dishes.We have a carefully selected menu that will make you want to order a glass of alcohol. Among the most recommended are the ``Nagoya Cochin Negima'', the limited quantity ``Green Chili Dashi Roll'', and ``Potato Salad''. [Yamamotoya Honten Sakae Branch] is located in the center of the Sakae area, directly connected to Crystal Square of Sakae Station on the Nagoya Municipal Subway Higashiyama Line and Meijo Line. The interior is decorated with wood grain and elegant colors, and is equipped with table seats and L-shaped seats for three people. There are large halls around the area, so it's perfect for recharging your energy before or after a live performance! Please use it not only for a casual meal or a quick drink, but also as a place to fill up before sightseeing.

The homemade noodles, which are adjusted by a dedicated craftsman according to the daily temperature and humidity, are made using only flour and fresh water, without salt. It has a chewy texture that will surprise you when you eat it for the first time. The soup uses a dashi stock made from bonito flakes, horse mackerel flakes, and chicken stock, and an original red miso brewed using a secret recipe. By cooking and serving the food in an earthenware pot made from clay from Iga City, Mie Prefecture, the flavor of the ingredients is preserved and the food stays warm for a long time.
