今日、このお料理に合わせたワインは
同じロワール地方アンジュの白ワイン、
AOCシュナンブラン2018
前回は2012だったかな
同じロワール地方だから多分相性は
いいだろうとの事と
アンジュはロゼが有名だけど
ロゼだと少し甘すぎるかなあって考えると
この白のシュナンブランをねかせて
まろやかに、余韻が残る感じに熟成させたのは
ピッタリの相性。
こんなものが簡単に買えるはずもなく
美味しい頃合いを見定めて
じっくり何年も管理してくれたソムリエさんに
本当に感謝、尊敬しかない。
ここのお店の素晴らしいところは
お料理も奇をてらわず
これはこうやって食べるのが美味しいよね
って言うシェフの理念と確かな技術、
その料理に阿吽の呼吸で
ドンピシャなペアリングワインを出すソムリエ。
このペアリングにしても
お客様のこのみで変えるから本当に凄い。
季節に合わせたクラシカルなフランス料理を
地元の食材と重ね合わせて
シェフの技術で一番美味しく仕上げた料理と
それに合わせて飲み頃を合わせた貴重なワインを
タイミングによってはグラスで提供するソムリエ
結構やばいくらいな奇跡を
体験してるんじゃないかって
いつもドキドキしながら食べてる
