ミシュランガイド愛知・岐阜・三重 2019 特別版で、ビブグルマンに選ばれた。
ここのところ暇だとFacebookに投稿していたので、だったら自分が行くと思い立って伺った。
自分がいる間は他に入って来なかったので、COVID-19の影響があるのかも
6600円コースのみの営業。
とことん素材にこだわる店主の名和氏が厳選した魚と野菜が中心のメニュー
凝った調理はせず、刺身で出したり炙ったりしただけで、素材そのものを楽しむ感じ。
野菜は世界中から最高の食材が集まる豊洲市場からの仕入れがほとんどで、地産地消といっても名古屋市場は物量メインで味は二の次なので仕入れしていないそう。
愛知産で選ぶとしたら「祖父江ぎんなん」かなとのことだった。
蕎麦の話しで盛り上がり、紗羅餐系の手打ち蕎麦 志庵のそばが美味いと話してたら、名和氏は、志庵のオーナーシェフが独立する前のお店でバイトしてた経験があるそう。
とことん食について話せて楽しい１日でした。
