京都出身のオーナーシェフ高松章浩氏が、名古屋に5年前にオーブンされたフレンチレストラン。
ソムリエの女性もオープン時からおられるベテランで、しっかりしたスタッフが揃っている印象です。
10月下旬の平日のランチにお伺いしました。ゆったりしたテーブル席で、落ち着いて食事が楽しめるムードです。
Menu Claire は7品からなるランチコースで、この内容で7000円(税サ別)というのはかなりリーズナブルな設定かと感動しました。
どの料理もセンスが良くて、アミューズから食欲が出てくる内容で、最後まで飽きさせません。一つ一つ丁寧に作られきれいで、キレがある料理が続きました。
★アミューズ
4品出てきたうち、名古屋コーチンの肉団子を詰めた熱々の揚げ物には、とりわけグッと惹かれました。
★いくら 越冬メークイン
ほのかな酸味の青柚子のジュレを底に敷いて、メークインのムース、いくらのほのかな塩味のみの繊細で優しい逸品。ここでシェフのセンスの良さを実感。
★赤パプリカ アマランサス
赤パプリカを千切りにしてテリーヌの形にジュレで固め、その上に赤パプリカのムースとナスのピューレ、新生姜のアイスパウダー、シソ似のアマランサス、ピオーネ

炭火でゆっくり焼き上げた蝦夷鹿は柔らかくて旨味あり。瑞々しい茄子の付け合せもいい
★クーランショコラ 和栗
ミッシェルブラスのデザートを思い出しました。チョコが上質で栗もどんと入っていて、贅沢な美味しさです。パティシエを長くやっていた経歴も持つシェフの強みが十分に発揮されています。
料理がこれ程素晴らしいのに、デザートまで抜きん出ているとは!天は二物を与えた、というか色んな経験をし努力を積んでこられた結果に他ならないのでしょう。
