早い安い！くるくる寿司チェーンのパイオニア @ かっぱ寿司
久しぶりのかっぱ寿司。
この厳しい時期に、平日¥90にしたとか・・・
ここ水主町店、駐車場の二階が店内で、半端なく広い(客席が多い)。お客さんもよく入っている。
入口では、入店順番待ち番号発券機があるが、幸い使うこともなく、カウンター席に通された。
ここからはセルフサービス。
湯のみに粉末状のお茶とお湯を入れる。
小皿に、醤油とガリを別々に入れる。
くるくる回って来る寿司を見渡し、ピックアップする。
好みのがなかったら、目の位置にあるタッチパネルでオーダーをする。
オーダーしてから数分で、新幹線の形をした容器に載せて寿司が搬送されて来る。
これらがすこぶるシステマチックでスピーディなのだ。回転寿司でない普通の寿司屋のスピードを凌駕しているのではないかな？
これだけの大人数にしてそのスピードがすごい。
店のスタッフは入店時の案内と精算時だけ出てくるが、対応は早くストレスは全く無し。
10皿程度なら、確実に30分以内で食べ終えれるかな？それ以上店に長居する人のためには、寿司以外の周辺品が用意されている。デザートはもちろん、カレーやうどん、ラーメンまである。

○ 低単価×多注文数で絶対売上を確保。
機械化、セルフ化で販管費の低減をはかるビジネスモデルかな？これもマーケットが旺盛でないと成り立たないね。
ちなみに、本日のオーダーは、
ツブ貝、スルメイカ、タコ、ビンチョウマグロ、秋刀魚の炙り、エンガワ大葉、あおやぎ、サーモン、ハマチの9品で、お代は〆て千円未満。
寿司もTPOSで使い分けれる時代やね。
