東海地方で “栗きんとん” といえば、おせちに入っている黄色いアレではなく、栗の練り切りに細かい栗の粒を混ぜ込んだこのお菓子。爪楊枝などで刺すとポクポク砕けるが、口に含むとしっとりとした食感に変わる。この食感の変化と栗の風味、自然で仄かな甘味が堪らない。
栗きんとん巻 270円
棒状に成形した栗きんとんを大あんまきの様に皮で包んである。ホクホクの栗きんとんの食感と風味が、ふんわりとした皮の香ばしさと良く合っている。
栗きんとん大福 270円
栗きんとんを求肥で包んだ大福。
ほんのり甘くてもちもちの求肥の中で、栗きんとんの独特の食感と風味が活きる。お互いの仄かな甘味と、もっちりとほっくりの食感が組み合わさって心地良い。
麩まんじゅう 162円
しっとり甘いあんこを生麩で包んだ饅頭。柔らかいがコシのある生麩に、きめ細かく程よい甘味のあんこが絶妙。
包んであるのはサルトリイバラの葉ではなく、笹の葉。
