野嵯和に伺うことは 楽しいイベントであり、ステータスシンボルになっているようです。
お料理は 最初から最後まで
盛り付けのセンス、見た目の美しさ、ベストなタイミング、隙がなく、素晴らしい。
高級食材の組み合わせですが
それぞれの食材が決してぶつかることなく、
口の中で、お互いがさらに美味しくなる調味料になっているかのような
噛むほどに美味しく、優しい味になっていきます。
初めて食べるものばかりでした。
最適な温度、口に入る大きさ、噛み応え、旨味の広がりは
計算され尽くした料理人の技を感じます。
目の前で クエのお刺身を切りつけて頂きました。
物腰の柔らかい、笑顔の大将ですが
ひときわ長い刺身包丁を使う 所作の美しさ、集中力に
そこに居た皆が、黙って注目してしまいました。
「 緊張するから・・ 」と 最後は笑顔で笑ってくれましたが
チョットした エンターテイメントですね。
素晴らしい料理の数々、雰囲気、おもてなしは 満足度は最高です。
なかなか予約を取ることが難しいですが、食通の皆様がリピートする気持ちがわかります。
