スペシャルランチ1000円を頂きました。野菜サラダ、ハンバーグとカキフライ、白飯、味噌汁、プチデザート、珈琲の構成です。
野菜サラダは仄かに冷たく温度管理された葉野菜と冬野菜を和風ドレッシングが覆う。
ハンバーグは180gあり胡椒等のスパイスが効く。パン粉使いに拘りがあり風味豊でボリューム感を両立。1週間仕込まれた自家製デミグラスソースは少し希釈されているような印象だが、その味わいは貫かれている印象。カキフライは若干小ぶりのサイズだが牡蠣汁が口内に広がる。旨い。
味噌汁は出汁の味わいが立つ。もう少し量が欲しいかな。
珈琲は煮出し系かな。食後のわずかの休憩のお供。
シェフはホテルご出身だそうで、受け継いだ父親の洋食レシピも使い、仕込み・調理には拘わっているそうです。夜の居酒屋営業を主にしているのだろうか、店内は薄暗く、若干雑然としているという印象かな。
