もみじで有名な香嵐渓にある古民家を改造した蕎麦屋さん。
駐車場は道を挟んだ向かいの駐車場の一角に確保されている。
靴を脱いで障子を開けると和テーブル席と奥が椅子席、左が調理場になっている。
蕎麦は一種類で、いくつかのセットメニューがあるので、蕎麦のついているものを注文した。
蕎麦は小山のような状態で盛られ、エッジが立ち、切りむらや端切れは目立たない。
味と香りは十分あり、かなり美味しい。
薬味はネギとわさびだ。
辛汁は可もなく不可もなくといった感じだ。
蕎麦湯は釜湯で風味十分だ。
今は閑散としているが、いわゆる観光地の蕎麦屋で、こんな上質な蕎麦を提供しているのはいささか驚いた。
塩の道といって、昔は沿岸部から内陸部に運ぶルートがあった。
信州に塩を送るいくつかの塩の道の中で、ここは三河足助ルートの宿場町として栄えたところらしい。
そのことは店の名前にも反映されているのだろう。
店の人が、この店の蕎麦は信州の佐久から取り寄せているといっていた。
テーブルの上に藻塩が置かれ、初めは塩でといわれたのはむべなるかな。
