The water, sauce, soup, and stewing water are all sourced from the spring water drawn from Ichiban Shimizu in Kiyouchi Village, Achi (Hirugami Onsen), Shimoina County, at the southern end of the Centr
...al Alps. In February 2010, it was selected as one of Shinshu's famous and secret waters. The rice used is Iida Koshihikari, a reduced-pesticide rice grown in Iida, southern Shinshu. The meat, offal, and meat used are domestic beef, pork, and Mikawa chicken. The vegetables used are from southern Shinshu, or locally grown in Nishio, Kira, and Hekinan.
