北東北の旅、第1弾のランチは秋田です。
いくつか候補はあったのですが、比内地鶏でも、ということでこちらを選択。
正午を少し過ぎた時間帯の訪問。店頭の待機名簿に名前を書いてしばし待つ。
お昼時というのもあると推察しますが、それにしても人気店ですね。20分ほどで店内に。ランチでは比内地鶏を使った究極の親子丼しか選べないというので、問答無用で究極をオーダー。親子丼はクラシックな見た目ですが、ずいぶんとよくできています。はやりのふわトロ系。卵は濃厚、その分味付けも濃いめ。北東北特有の甘塩っぱい感じがありますね。
鶏肉自体は炭火であぶってあるものの、肉を包む餡＝卵自体が濃厚なので見事にバランスが取れている。親子丼に炭火であぶった肉を具材として使うのは、全体の繊細な風味が崩れてしまうので好まないのですが、これは驚きですね。比内地鶏の肉に卵という素材そのもののレベルが、既存の料理の枠にとらわれないということなのでしょうか。確かにこれだけかみ応えがあって味わい深い肉ならば、通常の手順で調理してしまっては素材そのものの味わいは引き出せない、味わえないかもしれませんね。いい素材は、その素材にあった調理法があるといいますから、この親子丼が1つの実例になるのかもしれません。
備え付けの豆腐も味が濃く、特製でしたし、吸い物も鶏だしの風味が生きた素晴らしい味わい。お値段張りますが、親子丼の見識を広げるためにも、一度味わってみて損はないと感じました。ごちそうさまでした。
