秋田で稲庭うどんならぬ稲庭中華を手繰った。
そういえば高松でも讃岐うどんならぬ讃岐ラーメンを手繰ったっけ。
ふと気になり稲庭うどんの由来を調べでみた。
江戸時代初期、秋田藩稲庭村小沢集落で各種麺類を製造していた佐藤市兵衛（いちべえ）の技術を、初代稲庭（佐藤）吉左衛門（きちざえもん）が受け継ぎ、改良を加えて寛文5年（1665年）に製法を確立させたと言われているそう。
この350年以上も前に確立された稲庭うどんの技法を取り入れた中華そば。
艶々として喉越し良く、シコシコとした歯応えも心地良い。
キンキンに冷えた淡麗なスープがこれまたこの麺に良く合うから嬉しい。
個人的には稲庭は中華そばの方が好きかも。
次はあったかい中華そばを手繰りたい。
