Reducing Food Waste
Vegetables that are rejected because of their appearance or size, as well as substandard meat and seafood, are also used as dashi ingredients. Furthermore, most of Ramen soup stock is made from domestic ingredients.
Using Sustainable Ingredients
I use rice, vegetables, and fruit trees in my cooking using farming methods that have been used for decades, and I have seen with my own eyes the level of fertilizers and pesticides used. I also go to places outside the prefecture where photography is prohibited.
Environmental Protection Initiatives
We are working to reduce CO2 emissions by reducing the number of shipments by purchasing more at once.

Yokote City, Akita Prefecture, is located in Japan's largest basin and is blessed with rivers and fertile soil, and is blessed with an abundance of land-based delicacies. Our restaurant takes advantage of this by creating locally produced French cuisine with lots of vegetables.
