JR青森駅から近いアウガ新鮮市場の裏手にある『大谷製麺工場 直売所』。
大正15年創業で、90年以上も青森で愛され続けている老舗のお蕎麦屋さんである。
店名も製麺工場だけあって、お店では自家製のそば、うどん、中華そば、焼きそばなどの麺類を製造販売をしている。
店内には昭和の面影が色濃いテーブル席があり、茹でたてのそばやうどんが食べれる。
青森の知人から、この店の雲谷そばを勧められたので、宿泊先のホテル青森の朝食をキャンセルして訪問。
青森のソールフードの雲谷そばを味わった。

◆ 山菜雲谷そば
◉雲谷そばは、青森市雲谷地区のそば粉100％でつなぎを使わずに作っている。
箸で持ち上げるとぶつぶつと切れてしまうほど柔らかいのが特徴。
出汁は煮干し系の香りを感じる薄味の優しいそば汁である。
食べてる最中に地元の方がひっきりなしに麺を購入しに来ていた。
この日の朝は手がかじかむ位寒かったので、温かい雲谷そばの一杯は美味かった❗️
