『津軽そば』とは、つなぎに大豆をすりつぶした呉汁(ごじる)を使用した蕎麦のこと。その誕生は江戸時代まで遡りますが、大変に手間がかかることから廃れてしまったため、"幻の蕎麦"と呼ばれているそうです。
平成になって地元の料理人達の努力で復活した幻の津軽そばは、驚くほど柔らかい麺でした。
柔らか過ぎて、箸に込めるパワーを誤ると千切れてしまいますので、力加減にご注意ください。
麺の風味も独特で、一口目の感想は「海藻でも練り込んでいるのか？」でした。
大豆と海藻の違いも分からねえのか？とか言わないでください（涙）
