平日の正午に訪問。ちょうどテーブル席が空いてたが、その後は満席状態が続いた。何となしに表題をオーダーしたところ、この味噌がとても琴線に触れた。スープを一口含んだ瞬間、30年前によく通った笹塚の「ぜんべい」がフラッシュバックした。信州系の赤味噌だろうか、豆板醤やニンニクが少し効いていて仄かに甘い。塩味や出汁感がやや淡いところまで似ている。こちらの方が野菜や挽肉の影響もあってやや甘くボディ感もある気はするが、かなり昔のことだから定かではない。とても懐かしい味がした。そして手打ち麺の方は面白い。加水を抑え気味で小麦の密度があり、グルテンの形成は強く、湯で切っている。縦の食感に長け、歯応えがあって弾力もある。とても良かった。食後に聞けば焼きそばだけは手打ちでは無いそうだ。チャーハンや餃子も気になる。機会を設けて必ずや再訪したい。
