今年数軒の鮨店が柏でOpenした様で、その中でも気になるコチラを予約して訪問します。
柏駅東口を出て数分の好立地、ビルの4Fにあります「柏 鮨処 赤酢 有馬」
同じ階の同じフロアに鮨店と炭火焼肉の店が共存している面白い構成の店です。
赤酢を使ったシャリと北海道から空輸したネタ。 個室では鮨も炭火焼肉も選べる様ですが
カウンター席の方は鮨専用、L型のカウンターは10席程度の間隔を開けて７～8席で運用中。

五星ホテルの日本料理店出身の大将、握りの間につまみを挟んで来ます。
握りに関してはシャリが特徴的で、塩味程々に酸味を飛ばした赤酢で米の甘みが最初に主張して来る珍しいタイプ。
炊きは柔らかめな物の、米の粒感は残っている。
ネタの多くは北海道から取り寄せていて、江戸前と蝦夷前の混成と言った感じです。
唎酒師にお任せして日本酒をチョイスする事で、シャリに合わせた辛口の日本酒と合わせる事で
意外な調和が有ります。 メニューに載っていない日本酒を出して頂けました。
下手な大間より、海外の鮪の方が鮪らしい脂の乗りが有り、大トロ、裏巻は良い出来でした。
