煮干しらーめん専門店に訪問

新京成線五香駅の西口から２~３分の所にある『麺屋むどう』さんに伺いました。

店内に入ると、店主より食券をお願いしますとお声掛け頂き、券売機で「煮干し塩らーめん」¥900と「味玉子」¥100をポチり。
食券を手渡しカウンター席に着く。店内はＬ字カウンター席のみで、先客は３名。

数分後に着盆です。綺麗な黄金色のスープに麺は中細ストレート麺。具はチャーシュー・メンマ・タマネギ・味玉子。

先ずはスープを一口飲むと、熱々で煮干しの感じと塩の旨味が堪らなく旨い。
麺も中細なので、啜り易い。チャーシューは脂がほとんどなく、さっぱりした感じだが柔らかく美味しい。タマネギとスープを口に含むと、両方の風味も味わえて良い。

和食の出汁のような日本人の舌と胃に優しく沁みるスープのラーメンを化学調味料を一切使用せずに作っております。
2018年現在の製法では「煮干し、昆布、しいたけ」のみで作る純煮干しのスープでご用意しております。
