味玉潮そば ¥1030
初石駅から徒歩4分程度のこちラ。
流山エリアで圧倒的な人気を誇る千葉県内有数の淡麗系の名店。2016年12月に「和菓子 おおつき」の跡地にオープン。過去には食べログの百名店にも選出されている。
土日10時半ごろ着。20人目に記帳。90分ほど待ち着席。
【スープ】
鶏と豚骨、節系などの和出汁という3種の出汁を合わせた淡麗系のスープ。塩ダレのエッジも効いていて塩味の不足感は一切ない。また出汁感も強くタレとのバランスも絶妙。揚げネギの風味のアクセントも非常に効果的。
【麺】
自家製の中細ストレート麺。加水率は中程度で程よくパツっとしている。啜り心地よきでスープとの相性も抜群の麺である。
【トッピング】
チャーシュー、味玉、メンマ、ネギ、カイワレ。
チャーシューは煮豚のバラと吊し焼きのものが1枚ずつ。ホロホロで柔らかく脂の甘みがある煮豚も燻香豊かな吊し焼きもどちらもクオリティは非常に高い。味玉はサイズ大きめで茹で加減はやや硬め程度の好みなやつ。メンマはしっかりと食感のあるタイプ。
オリジナリティに富んだ塩ラーメンに大満足。距離が距離なので再訪難易度は高いが他の味を食べにまた来たいところである。ごちそうさまでした。
