GWの1泊目は想像以上に市内のお店が埋まっておりましたが、寸前でも予約できたこちらのお店で、鯛しゃぶのコースを頂きました。
先付のしらすの焼き茶碗蒸しに始まり、お料理は定番にひとひねりが加わったものが続きます。
八寸はエンドウ豆の木の芽味噌焼き、タコの柔らか煮、蛤と蛤ジュレ。貝のジュレって珍しいですが、凝縮された味わいが堪能できます。
追加で一品お願いしたのは、鯛の揚げ出しの柚子おろし。
お椀は、鱧で茶蕎麦を巻いて蒸したもの。焼いたヤングコーンのシャキシャキした食感と香ばしさが、柔らかな鱧と良い対比。
お造りはカンパチ、鯛、太刀魚。太刀魚の焙った皮と柔らかな身は良いコントラスト。鯛も甘味を感じる豊かな味わい。
焼き八寸は、サヨリのカラスミ巻きに、和牛ローストビーフ。カラスミのパンチある味わいと、ローストビーフの滑らかさが絶妙。
肉じゃが豆腐は、肉じゃがのじゃがいもをつぶして作ったなんともユニークなもの。見た目に反してサクサクした、いかにもじゃがいもらしい食感と、しっかり肉じゃがな味わいが意表をつきます。
主役の鯛しゃぶは、身が厚めで食べ応えあり。たっぷり添えられた大根のツマもしゃぶしゃぶにすると、鯛の出汁が存分に味わえます。
ご飯は鯛の土鍋ご飯。焙った鯛が香ばしい、この地域の恵みを感じられる一品です。鯛しゃぶのお出汁もあわせて頂けますが、このお出汁は少々濃すぎる気がしなくもなく。
デザートは滑らかでこくのある、自家製塩アイス。
あと、ご主人が完全にお一人で調理をこなされているのも感嘆。この形でやりたかったから店を始めた、とのことですが、合間で電話対応もされて、何と言うハイクオリティなワンオペ。
この日は鯛しゃぶコースに、鯛の揚げ出し一皿、ウーロン茶2杯で、2人で14,000円ちょっと。コスパの良さに感激。近くにあったら、これは通いたくなりますねえ。
