[Authentic Chinese Rin] ``Rin's Mapo Tofu'' stands out. First of all, the chili oil is homemade and made from 7 types of ingredients. Boil firm tofu until it is indistinguishable from silken tofu. This prevents moisture from coming out when added to the sauce, and the flavor of the sauce is not diluted. Because the water has been removed, the flavor of the sauce is absorbed easily, and since it is moderately hard, it does not lose its shape and has a very nice texture.
