昭和34年の創業以来、3代にわたって名門の味を今に伝える「秋吉」。「秋吉」の焼き鳥は、職人が一串一串を手作業で刺している。手作業にこだわるのは当然「味」に対するこだわり。鶏肉の部位によって固さが異なるため、手先の微妙な感覚で刺し方を変え、さらには素材に均一に火が入ることも計算している。通常は200〜400度の熱が一般的なのに対し、「秋吉」では800度の炎の根元で焼くので、肉の旨みが強火で一気に凝縮
