点数が低い様に見えますが食べログの性質上、テイクアウトファストフードから三つ星レストランなんかもこの5段階の評価の内ですので悪いという意味ではありません。
福井市の一応繁華街「片町」にある割烹。
少しだけ裏通りで目立つことなくやっています。
店内は1階はカウンターが主で。
2階はお座敷です。
どちらかというとアラカルトが主のお店。
間海に来たら「お魚」を食べてください。というくらいのお店です。
まず、お箸が若狭塗り箸。螺鈿も綺麗な細工です。おしぼりも立派です。
お通し
たらこ生姜 煮
里芋 煮
鯛刺身
想像以上に柔らかい。ポン酢で。
造り盛り
ブリの食感がコリコリ。エビ2尾。軽いシメサバ。醤油と大根おろしで。
のどぐろ塩焼き。目の前で捌かれてそのまま串打ち。妻折で。かなりの柔らかさで油がすごい。さすがはのどぐろ。
アワビのバター焼き。これも柔らかくて満足。
鱈の鏡焼き。プリップリ。とても良い食感。
同じく目の前で捌いて串打ち。輪切り。
白魚と安島産菅藻のお吸い物
これは好き好き分かれそう。あんまり美味しくはありませんでした。
そばと焼きりんごのシャーベット。
これも味としてはもう１つ。
お皿と盛り付けが全てにおいて古い感じです。
お店の整理整頓が出来ていなくてゴタゴタしています。よく言えば赤提灯感。「味」としての繊細さやバランス感はややとれていません。
贅沢で上質かといわれればまだまだ大衆的でもあるのかもしれないし、店主としてはそれが目的なのかもしれない。
全体を通して魚介中心のメニュー。
どれもほぼ、その場で捌かれて調理。
北陸を愛し大事にしているお料理。北陸のお魚をリーズナブルに良いものを食べたいと言われたらオススメ出来るお店の１つです。
強い意志は感じます。
