I stayed in Fukui. I had dinner at Japanese-style meal restaurant in Katamachi. On this day, I ordered a course meal that included Fukui specialties. I quenched my thirst with a highball. The appetizer platter was served on a beautiful plate. It went down well with alcohol. It was a platter of wild sashimi. I like togezako shrimp, so I was glad to be able to eat it. It is a shrimp that is very similar to kurozako shrimp. This shrimp loses its freshness quickly and turns black, so it can only be eaten in the place of origin. Depending on the region, it is called by various names such as doro ebi, gas ebi, mosa ebi, and gasaebi, but togezako shrimp and kurozako shrimp are better known by their common names because only experts can distinguish them. It is a very sweet and delicious shrimp. Wakasa beef Sukiyaki. It is eaten by dipping it in beaten egg. The sauce is not heavy, so you can directly taste the deliciousness of the marbled meat. It is grilled mackerel Sushi. Mackerel has been caught in large quantities in Fukui since ancient times, so mackerel is often eaten. The thick mackerel is grilled to a fragrant finish. Takeda's grilled fried tofu, a Fukui specialty, is served with grated daikon radish. Fukui Prefecture has been the number one in Japan in terms of fried tofu consumption and purchases for many years. Takeda's fried tofu is particularly famous. The Takeda area was a post town for monks climbing Mt. Hakusan, and once had a large temple called Sanzenbo. Fried tofu, which is also used in vegetarian cuisine, was a valuable source of protein at the time. It was especially valued as an alternative to meat and fish during the snowy winter. The surface is crispy and the inside is chewy. The final dish is Echizen grated daikon radish soba. It is flat soba. The soup is poured over it from the beginning. It is served with grated daikon radish, bonito flakes, and chopped green onions. The dessert is habutae mochi, roasted green Ice cream, orange, and kiwi. "Hbutae mochi" is a sweet that reproduces "habutae", a famous silk fabric of Fukui Prefecture.
