Kaiseki cuisine, Pork Dishes, and duck cuisine. We allow each dish to reflect the changing seasons and offer the original taste of Japanese Cuisine using seasonal natural ingredients. We pay special attention to the temperature at which our food is served so that you can enjoy delicious seasonal ingredients in the best condition just for our customers who have made a reservation. We are particular about the water we use in our dishes, and we order groundwater pumped from 200 meters underground, a clear stream called "Todoroke Stream" in Kyushu's Taradake Mountains, for use in soup stock, pickles, and as the base of our cooking.

We used the natural water ``Todorokei Water,'' which has been selected as one of Japan's top 100 waters, and natural kelp carefully selected just for mentaiko.
