(2023.11.04) "Japanese Cuisine Teraoka" has been loved by Fukuoka citizens for nearly 50 years since its establishment in 1976. It used to have branches in Tenjin and Haruyoshi, but now it is located across the Nishiohashi Bridge over the Naka River. This is the only one right next to the restaurant... Maybe because they wanted small groups to feel free to use it, the 4th floor was renovated and opened in July last year as the "Takumi no Dojo" where you can enjoy Japanese-style meal and Sushi. I learned that they had started business, so I stopped by. After getting off the elevator and passing through the private rooms on both sides, there is a Sushi counter where you can see the chefs right in front of you...The back of the counter is a Juraku wall. I would like to eat Sushi at the counter, which is said to be made of mud and has stamped pictures of ears of rice drawn on it, but unfortunately the counter is full of customers from Korea. I ordered a ``Kami Nigiri Sushi Zen'' and was served sesame tofu and eggplant shigiyaki as an appetizer.It was served with ``Tama Miso'' as you would expect from Japanese Cuisine. The sesame tofu had a smooth texture and well-balanced sweetness and saltiness, and I enjoyed the shigiyaki, the dengaku miso with the sweetness of sugar and mirin, and the melty eggplant. Unfortunately, about half of the eggplants were not cooked properly.After enjoying the smooth texture of the piping hot chawanmushi with dashi soup, the first plate of Sushi consisted of medium-fatty fatty tuna and Thai sushi. There are 7 pieces of squid, salmon, scallops, striped horse mackerel, and egg, mainly kelp jime...The mild aroma and salty taste of the nikiri soy sauce seems to bring out the flavor of the ingredients.For the second dish, we had the toro maki, Sea urchin, raw shrimp, red sea bream, and egg are served on the plate, and smoked barracuda Sushi is served.The toro rolls and sea urchin were perfectly satisfying, but...the smoked Sushi must have been thought out. Although I found the aroma delicious, I was disappointed that the important barracuda was not able to handle its watery taste.I was reluctant to eat dark raw shrimp that looked like black tiger shrimp... When I tried it, I found that although it wasn't that bad, I didn't really feel the sweetness, and I still didn't like it.The red vinegar sushi was small and elegant, but the 13 pieces of Sushi The dessert was fruit agar.The agar had a slightly hard texture and had a sour taste from the mandarin oranges...it had a nice aftertaste.
