A store specializing in chin soup stock in Fukuoka Yakuin. I wouldn't have known about this restaurant unless someone from Fukuoka took me there, but it was really delicious. The specialty is the chin soup stock carefully extracted from ``Yaki-Ago'', which is made by grilling fresh flying fish from Hirado, Nagasaki Prefecture over charcoal. We use chin soup stock not only for our signature dish shabu shabu, but also for a variety of other dishes. Of course, the black pork and raw lettuce shabu shabu was exquisite, and all the other dishes were also delicious. (Lettuce goes well with shabu shabu.) If I have a chance to eat out at night in Fukuoka, this is a restaurant I would like to go to again.
