It took a year to develop, and we wanted people to feel closer to truffles, so we combined Japanese and Western flavors to match the familiar udon noodles. The noodles are udon from Nagasaki Goto, which I arrived at after repeated tastings! It's the perfect combination that brings out the flavor of the udon while making the most of the truffle stock! Even if you look all over Japan, the only thing you can eat is cooking!
