Food A gem of soba made with Hitachi Autumn soba. A highly aromatic delicacy.
The soba noodles served at our restaurant are made using only Hitachi Aki Soba, a branded variety from Ibaraki Prefecture that the owner fell in love with during his training. Hitachi Aki Soba has a strong fragrance and sweetness, making it an excellent match for sake with a slightly sour, mild aroma. The buckwheat flour is procured directly from the producers and kneaded in a ratio of 28:19 depending on the condition of the flour. The most recommended dish is the "Mori Soba," which is characterized by its slightly flat cross section and glossy appearance. Please do try this outstanding dish, which has a smooth texture and goes down easy.

One of the recommendations is Tempura made with organic vegetables. You can enjoy seasonal vegetables with tempura sauce based on soba soup. We also offer rolled omelet made with eggs from chickens raised on only pesticide-free rice and vegetables. The soup stock is based on kelp, and the elegant aroma of bonito is irresistible. Other must-try is the "kitsune comte," a deep-fried fish stuffed with comte cheese and baked. It goes well with wine and sake, so please enjoy it with alcohol.

We have about 10 types of sake that we are proud of. The lineup includes seasonal sake, with the owner personally visiting breweries around the country to select the best sake. There is also a wide selection of natural wines, mainly from France and Japan. The shochu we select is made with care in small batches, mainly from Kagoshima. We also have about five types of sake from Alchemier Tatsumi Distillery, so you can taste rare spirits. We Other have beautiful sake ware from Oya Kiln, so be sure to check it out◎
