When it comes to hand-pulled udon, Goto udon from Nagasaki is famous in Kyushu, but I have always been interested in Kineya in Fukuoka City, and finally had the chance to go there. I visited after 1pm on a warm holiday in February. The restaurant was almost full. I ordered a warm Kitsune Udon (480 yen) with an additional topping of Goboten (200 yen). It was served in about 10 minutes. First, I sipped the soup. The aroma of the soup stock made from various fish flakes and kelp was very rich and delicious. I have felt that udon soup stock was salty or thin before, but this was the first time I felt that it was rich. The noodles are round and smooth, unlike hand-made udon, which is cut with a knife and has sharp edges. The noodles are not very long, and I didn't feel that they were chewy. But they feel very gentle on the lips. I felt the restaurant's commitment and confidence in the balance between the rich soup stock and the soft, fluffy noodles. The dish was topped with a generous four slices of "fried tofu." The sweetness of the tofu melted in the broth, making it delicious. The burdock tempura served on a separate plate was thickly sliced, well-seasoned, and crunchy, and was freshly fried and crispy. It was very satisfying to eat. I had half of it on top of the udon, and the other half sprinkled with salt to make it crispy. It is rare among restaurants in Fukuoka and Kyushu, and I think this is a rare restaurant that stands out for its individuality by focusing on "hand-pulled udon." As a local, I would like to cherish this place. Thank you for the meal.
