At our restaurant, we are especially thorough in our "pre-treatment. We use broth to remove dirt that causes unpleasant tastes and odors, and then serve clean tidbits. The excess fat is also removed, resulting in an elegant flavor. The base of the nabe is Hakata classic 's "Soy Sauce", "Special Chige" with spicy chili peppers and other spices, and "Thick Miso" made with aged miso, which is available only by reservation.
