Our recommendation is the extremely fresh horse liver sashimi! The liver is delivered vacuum frozen and thawed under running water before being cooked. The beef liver made during the process of making Prosciutto is also highly recommended! It is heated at a low temperature, so it has no odor and an addictive taste.
