北九州の郷土料理のぬかだきだそうです。
糠みそ由来のアミノ酸や有機酸がもたらす複雑な旨味の付与に加え、独特の発酵臭によるマスキング効果、乳酸によるpHの低下で青魚独特の臭みが抑えられる等の利点がある
wikiによると上のような効能のある糠で炊いた青身魚の焚き物です。
広島では珍しいので買ってみました。
食べてみるとこってりした味噌煮込み味ですね。
こちらのお店は中骨まで柔らかく炊かれてたんで捨てるところがありませんでした。
お土産で買えばよかったかなという美味しさでした。
