これまでも何度も訪れてはいるが、間違いなく久留米随一のイタリアンであると思う。この店から久留米で数名のシェフが独立をしているが、いづれもやはりサラ・カリーナには遠く及ばない。また数年前に福岡に出店してから、福岡でもその評価はゆるぎないものとなり、トップシェフは福岡で腕を奮っているが、その原点である久留米店の質も決して落ちていない。何より久留米店の女性の給仕の素晴らしいホスピタリティには脱帽である。飲み物の好み、前回食べた食事の内容を踏まえてアラカルトメニューを薦める。先日は６名で伺った。予約の段階から料理の打ち合わせも気さくに応じてくれる。コースメニューを私の好みにアレンジしてもらった。この辺のわがままが利くのもありがたい。パスタ類は言うに及ばず、中でも特筆はピッツアのおいしさではなかろうか。生地も十分に味わい深く、石窯があるのだろうか、焼き加減も乾燥しすぎず素晴らしい。また冬のジビエの季節の多彩なジビエ料理も薦めたい。これから冬場に入るが、昨年のココの鹿肉料理は濃厚で味わい深い赤身の肉のうまさが際立つおいしさを放っていたことを今も思い起こし、本年も期待してしまう。
難点はプライベート感があまりない点であろうか。ワインセラーに面した半地階のようなスペースはややプライベートな感があるが、個室があるとなお良いと思う。また、価格も決して安くはない。しかし確かに味に見合った値段設定であると感じる。やはりこの店は久留米の名店である。味の好みは人それぞれ。一度は訪れて、試していただきたい店である。
