久留米の老舗のラーメン屋さん。
休日の夜に初訪問。
大きなお店。
◎屋台仕込み味玉ラーメン 900円
にしました。
スープは白濁。少し泡立ち。
濃厚なとんこつスープ。
口当たりまろやか。
麺は細くストレート。
メンマはやや太い短冊。
味わい豊か。
チャーシュー、中判2枚。
味しっかり。
味玉、1個。半熟。
海苔、ねぎ
クルトンのようなものは、カリッと香ばしい。脂の旨み。
メニューの説明書きでは「カリカリ」と言って、背脂を揚げたものだそうです。
大変おいしかったです。

継ぎ足し製法でつくるヴィンテージスープ。
門外不出の元ダレ。
スープとの相性を考えた自家製麺。
久留米のラーメン文化を支えているお店のひとつだと思いました。
