I went to Escalie, an old folk house-style Bistro restaurant in Mizunami (´▽`) It is almost reserved for lunch on weekdays ♪ The menu is 3 courses for 1296 yen, 1728 yen, and 2160 yen, and the game meat is 1728 yen Since I only had venison, I chose the Gifu Gibier Deer Thigh Intestine Part Brick (1,728 yen) ♪ It was originally a dish that was fried in oil, but when I asked what oil was used, I was told it was soybean oil ^^; This time, we specially cooked it grilled instead of fried, and changed it to a dish without Fried food food ♪ [Course menu contents] Marinated salmon and brown rice baguette (refills available) Potato and turnip soup Persimmon, micro tomato, breakfast Foraged vegetable salad Deer thigh sausage Organic Food coffee Now, before I review the food, I personally became a fan of this restaurant ^ ^ This restaurant was originally open at Meieki for about 8 years. However, he moved to Gifu because he wanted to grow vegetables and rice with his own hands. We are now farming vannamei shrimp on land (the second such case in Japan), and NHK TV came to interview us on this day as well. In Japan, it is quite difficult to produce completely Organic Food farming as it can cause conflicts with surrounding farmers. However, it seems that this shop does not use any pesticides, even the rice, which normally requires large amounts of pesticides. We also purchase wild game meat from reliable sources that are free from radioactive contamination. This time's deer thigh sausage is also stuffed with my own hands, and no additives or preservatives are used! Sausage is usually an additive or a preserved mass, so I almost never eat it. However, this sausage is not only healthy and safe, but also delicious ^ ^ The homemade sausage, whose recipe is a trade secret, drips with meat juices and spreads the flavor of the meat in your mouth ♪ Vegetables and The quality of the rice is also evident from the quality of the ingredients. ^ ^ Everything is handmade from start to finish, and almost all the ingredients are homemade. I'm really impressed by the commitment ^ ^ I'm really happy that a shop like this exists, and I'd like to see more. I sincerely hope that there will be more shops like this.
