銀山町駅から徒歩3分、創業30年の「魚菜家(さかなや)」さん。広島産穴子料理が堪能できるお店です。事前に予約制の「広島産穴子尽くしコース」で予約し、当日訪問しました。

メニューのとおり、完全に穴子まみれのコースです!どの料理も旨いのですが、驚いたのは穴子のお刺身。
プリッとした肉厚の新鮮な身は、こりっとした食感で繊維質が強いです。でも噛めば噛むほど、爽やかな甘みの脂が滲み出てきて旨い。例えるならヒラメのエンガワに近い感じになるのでしょうか。
ちなみに穴子は血抜きとヌメリとりをしっかりしないと、生ではとても食べられたらものじゃないらしいので、板前さんの腕は確かな様子。
広島でも穴子の刺身が食べられるお店は少ないそうなので、とても重宝しそうなお店だと思います。
