Okonomiyaki Teppan-yaki Kohinata is a 3-minute walk from the Chuden-mae tram stop on the Hiroshima Electric Railway. It opened in 2009 and is staffed by the owner and one male staff member. The owner trained at Hinata near the Japanese Red Cross Hospital. The restaurant was named Kohinata after Hinata. The entrance is two levels below the road, with a glass door and wooden fittings, and a cutting sheet with pictures of Steak and Okonomiyaki on it, making it a fairly eye-catching exterior. The interior has a calm atmosphere with dark brown walls and brown wooden furniture. There are 9 seats at the L-shaped teppan counter and 2 teppan tables with 4 seats each, for a total of 17 seats. I ordered Nikutama Soba (800 yen including tax). It is a standard menu that shows the restaurant's skill. Basic combinations: Steamed medium-thick noodles, Otafuku sauce (for specialty stores), and cooking method: Keep it in the middle and finish.・Shape after cooking: Beautifully cooked ・Standard to eat on a hot plate or plate ①Put steamed medium-thick noodles on the hot plate, pour broth over them, loosen them, shape them into balls, and cook. ②After about 1 minute, spread the dough, sprinkle fish powder, drizzle broth over them, sprinkle shredded cabbage, garlic powder and seasonings, place tempura scraps and 3 slices of pork belly on top, sprinkle seasonings, and pour lard over them. ③After about 2 minutes, flip for the first time, and flip the noodles for the first time as well. ④After about 1 minute, pour salad oil into the base. ⑤After about 1 minute, remove the base dough, pour broth over it, and then put the dough back in. A lot of steam will rise. ⑥After about 1 minute, press the base twice firmly, then shape it. ⑦After about 1 minute, flip the noodles a second time, loosen them a little, and shape them into a ball. ⑧After about 1 minute, place the base on the noodles, and press firmly 2-3 times. ⑨After about 1 minute, split the egg in half and put it on the hot plate, crush the yolk and shape it into a round shape. ⑩After about 1 minute, flip it for the second time, place the soft-boiled egg on top of the base, spread Otafuku sauce (for specialty stores), sprinkle fish powder and green seaweed on top, and it's done. It took about 11 minutes to cook. Now, let's eat it. The Otafuku sauce is a slightly less sweet type for specialty stores, and the two soft-boiled eggs are mixed with the richness and flavor of the soft-boiled eggs to create a rich taste. The moderately crispy noodles and the soft texture match well. The medium-thick noodles are also poured with soup stock, and the base itself is also poured with soup stock after removing the dough, and it is not too watery because it is seasoned and water is added, but it is carefully cooked over high heat. The overall taste is strong, but the cooking method is well thought out, and I think the quality is good. If I had to say something, I think the pork belly is not very noticeable.
