"Noodles of Life" Yamamoto Shoten's "Bingo Yakisoba" uses two carefully selected types of wheat flour and "sticky Yakisoba (stir-fried noodles)", a specialty of the Setouchi region, ground into flour
...and mixed in a unique combination to create extra thick, chewy homemade noodles that are carefully made one by one in the noodle-making room inside the store. The thick, chewy noodles are baked on a hot plate in a way that makes them crispy on the outside and chewy in the middle, creating a new texture. The "Bingo Yakisoba (stir-fried noodles)" is then exquisitely combined with the "Buchiuma Sauce", which is slightly sweet but full of richness and flavor with nine types of spices.
