Soba under the fog uses buckwheat flour from Kamikawa-cho, Hokkaido. Produced in the fertile land at the foot of the Daisetsu Mountain Range, it is characterized by its fragrant aroma and rich flavor.

The flour is carefully ground in a stone mill by Asahikawa Dokai Seifun, which was founded in 1923.
Food homemade noodles
At our own noodle making factory in Motomachi, our craftsmen make the noodles by adjusting the water content according to the temperature and humidity of the day, and we deliver the freshly made noodles to restaurant twice a day.
